This oven roasted chicken breast is crispy-skinned, tender and juicy on the inside, and very flavorful. I use this recipe to make bone-in, skin-on chicken breasts and whole chickens. The most important part in this recipe is to not overcook the meat. You want to pull the chicken out of the oven at F internal temperature and let it rest for 5 minutes. If you let it cook past that temperature, it will get hopelessly dry and rubbery. Remember, when you pull the chicken breast out of the oven it will continue cooking and the temperature will continue rising by another 5 degrees or so.

Bone-In Chicken Breast Recipes - My Food and Family
For a long time this stuffed bone-in chicken breast was one of my go-to recipes whenever I cooked for friends. The baking powder helps the skin to get crisp. One of the reasons it stays so moist and tender is that the raw vegetables we stuff the chicken with release a lot of liquid during the cooking process, and the cheese helps to seal all of that moisture inside, where it belongs. If your chicken breasts tend to be on the dry side, then my hope is that this will be your go-to recipe, too. This time around I used onion, garlic, and smoked Gouda, but this is one of those recipes that cries out for experimentation.
